Paolo Sacchetto’s Estate in the north east of Italy produces a range of wines, but this Prosecco is the one which stood out for us. Made in the traditional way, Paolo has swapped the cork cage for a hand tied enclosure and it doesn’t get much more artisanal than that.
Like his dad and grandad before him, Paolo Sacchetto has been making fizz since his youth. His business is the definition of family run, with siblings and cousins in every nook of the vineyard and winery. Even his 80-something dad still turns up for work every day. Paolo doesn’t just make wine. He pours his heart and soul into it. It’s his life, his passion. As a genius with bubbles, he’s sometimes known as ‘The King of Prosecco’.
