Domaine des Nymphes, Vin Doux Naturel Rasteau, France
This wine is made from a direct pressing of ripe grapes, without maceration. The colour of the juice is pinkish. The fermentation starts quickly and when about 90 g of sugar remains fermentation is stopped by adding 5% to 6% of wine alcohol to stop the yeast activity. The wine is then stored in old 600 L barrels, for about twenty years, in order to ensure a good ageing without it taking on woody characteristics.
The Domaine des Nymphes is the story of a dream come true: that of Marcel Meyer who, in 1979, after having spent years at the Rasteau cooperative cellar, decided, with the help of his sons, daughter and son-in-law, to found his own estate, a family estate. Domaine des Nymphes was built around mythology, thanks to an altar dedicated to the Nymphs dating from Antiquity found in 1850 on the current site of the winery. The estate benefits from an exceptional terroir, made up of clay and limestone soils, blue and red marls. This remarkable composition has the particularity of absorbing the heat present during the day and releasing it during the night. The vines are also exposed to the south, giving them maximum light. The Mistral wind completes the picture by optimizing the slow maturation of the grapes.
It will go well with desserts such as Tiramisu, Spéculoos/caramel beurre salé pie and chocolate fondant.
